10th CSA DROP

Hi All!
Tonight, we are looking forward to our first good taste of some of the later crops of the season, that we were very lucky to harvest this year!

In this weeks CSA share:

Green Onions
Beets
Carrots
Squash
Yellow Beans
Green Cabbage
Celery
Potatoes
Blueberries
Bread
Eggs

The beets, carrots, cabbage, potatoes, and last week's golden beets have been blended up into a nice borscht. The golden beets give it a great colour.

Wow, is this the 10th drop already?!? Does that mean there are only 2 left??? :( Time sure has gone by quickly!

This week's potatoes will be a potato salad (along with some eggs, green onion and celery, of course!). We made a casserole out of the summer squash and the blueberries went into yesterday & today's breakfasts (fruit smoothie on Friday and whole wheat pancakes this morning). The carrots taste great! We've enjoyed them raw with dip and in coleslaw - I still have some left and may do carrot muffins or something like that with them. The zucchini was turned into a loaf last week and will be baked spears this week, and the beets have always been baked (at 400 degrees for 1 hr), but prepared differently after that: they were marinated in a vinaigrette once and sauteed in a pan the second time. Both methods were YUM! Today I spent some time searching for recipes to use the cabbage: may do a soup or maybe a 'lazy man's' cabbage roll (sort of like lasagna, but with cabbage roll ingredients). We shall see!

The beans went straight into the freezer, as we thought a bean salad in the middle of Winter may just hit the spot! :) I also freeze dried the basil ... looking forward to pasta sauce mid-February when the snow is flying and gardening is furthest from our minds. I just know it will taste amazing!!!
